I have a spreadsheet in which the amount of data may vary from month to month.  In another spreadsheet in the workbook I have an equation that references the first.  In order to correctly count the variable amount of data from month to month I would normally
select the entire column in the equation (e.g., =COUNTA(E:E).  However, there's a header row that would throw the equation off.

How do I set the equation to count the whole column except the header row?

Simply subtract the value of any extra rows of information that you are certain will be in the included list:
=COUNTA(E:E)-1
Or if you had 3 rows at the top that might or might not be filled in for that column, you could do something like this:
